This is an easy tofu Custard/ Vegan pudding recipe that can be made very quickly for a creamy, after-dinner delight.
Which type should I buy?
Types of tofu
Well, tofu has different styles from silken to soft to firm. The soft – firm/extra firm category is just based on the moisture content. It does not matter which style you buy – the more firm the tofu is, the thicker your pudding will be.
However, silken tofu has a slightly different texture than soft tofu. It is a lot more crumbly and I find that it does not hold its shape well. In my opinion, silken tofu is not suited for this pudding recipe.
Reasons why you should try this dessert
More Protein
Protein is more satiating than fat or carbs, so binge eating and going overboard on protein is harder.
Masking flavor
This is important –>>The tofu taste gets masked with the flavor. Even my daughter who does not like tofu in regular form ate this happily. Now, she wouldn’t have even known that I put tofu in it, if not for the fact that my husband, said rather loudly, “Wow, I cannot tell it is tofu.” You should have seen my daughter’s face when he said that :). So, Shhh…don’t disclose your cooking secrets!!
So Easy
It is super easy . Just blend and chill. Who does not like recipes like that?

Love this recipie!!! Can I use fresh mango instead of mango purée?
Thank you!! Yes you can add fresh mango, but you might have to add additional sweetener. Pure mango may not have enough sweetness to carry over for the tofu parts as well. If you stick with sugar or honey, you will retain the bright yellow color. If you choose dates, jaggery etc, the color may change.
