Bananas caramelized in butter (or ghee) makes a great dessert in itself or adds great flavor base to smoothies or baked goods
Using a large non-stick pan (or a crepe pan), melt 2 tbsp of butter on medium heat. Place the slices of bananas flat on the melted butter. Do not crowd the pan. Each slice must make contact with the bottom of the pan.
Keep the heat at medium, no higher or the bananas will burn. Wait for a good 7-8 minutes before flipping.
In the first few minutes, slide the pieces from side to side (or wiggle them) to avoid any burning. Do not flip them until the bottom is caramelized. (we want to avoid too much flipping back and forth, which may cause the banana to breakdown into a puddle).
Flip the banana slice to caramelize the second side. Give it another 7 minutes or so.
When both sides are done, the bananas would have shrunk to half its size. They will be concentrated in sweetness. Yumm!! Serve as is while hot!!
Drizzle with chocolate sauce (optional).
Cool down and make a smoothie with roasted bananas, milk and cocoa powder (no sugar needed).
Or grind the roasted bananas with cashew butter and freeze them for a delicious, healthy, sugar-free ice cream.
Or use for baking healthy cookies or banana bread
The possibilities are endless!!
Ghee roasted bananas are even tastier (well duh!!..because of the low moisture content), but butter works just as well.
