These carrot treats only contain 4- ingredients:
- Shredded Carrots
- Cashews
- Almond Flour
- Raw Sugar

It all starts with roasting the carrots in a pan. No ghee, no oil needed – just plain roasting for 3-4 minutes until the carrots develop a nice caramelized flavor.

You see…I made a healthy carrot halwa post earlier with raw carrots and lots of people have a problem with the raw taste….and that’s alright. Even a lot of carrot ball recipes in Pinterest have that raw taste.
But roasting the shredded carrots takes it to the next level!! There’s sometime about the maillard reaction, I suppose…

To the roasted carrots, add powdered cashews, almond flour and powdered raw sugar!! They come together like a nice dough. Shape them into balls. Voila!!! It is done…

- 1 large Carrot, finely shredded
- 1/4 cup Cashews
- 1/4 cup Almond Flour
- 2 tbsp Raw Sugar

Finely shred 1 large carrot. I used a huge carrot that gave me 1 cup equivalent of finely shredded carrots.

Place a wide pan on medium-high heat. Add shredded carrots and dry roast them well for 3-4 minutes until you start getting caramelization bits at the bottom of the pan. At this point, the carrots would have reduced to about 1/2 its original volume.

Powder 1/4 cup of cashews in a coffee grinder until you get a fine mix. Powder 2 tbsp of raw sugar similarly.

Add cashew flour, almond flour and powdered sugar to the roasted carrots and mix. This will come together like a dough.

Shape into balls or desired shape. Serve!!
Store leftovers in the refrigerator.
- When dry roasting the carrots, do not multi-task. We want to get the carrots nicely roasted and caramelized without using ghee or oil. So, do not get distracted during this process.
- If you don’t have almond flour, you can double the amount of cashews in the recipe.
