This is a vegan, healthy rava laddu | sooji ladoo recipe made with dates, coconut milk and rava. There is no ghee and this recipe is sugar free, yet the resulting ladoos are quite the treat!!
Traditional rava ladoo (semolina balls) is typically made with ghee and sugar and has no moisture, which enables it to stay for 2 weeks in Indian hot temperatures without spoiling.
But in the age of the refrigerator, you can enjoy this delicacy made with less concentrated calories and without stretching your waistline.

Recipe

A vegan, sugar free healthy rava ladoo, that is a perfect treat for your kids and your family
- 1/2 cup Dates (about 10 dates)
- 1/4 cup Coconut Milk (I used full fat canned coconut milk)
- 1/2 cup Powdered roasted rava
- 1/4 cup Blended Date paste
- 1/4 tsp Elaichi powder
- Finely diced apples
- Sliced almonds

Preheat oven to 350 F. Roast 1 cup rava in the oven till you get a reddish tinge and the rava is well toasted. It took 35-40 minutes in my oven to achieve that toastiness.
Alternatively, pan roast rava in a medium flame for 8-10 minutes, constantly stirring until well roasted.

Once it cools, powder the roasted rava in a dry blender and keep it aside.

In a high powered blender, blend 1/2 cup dates (about 10 dates) and 1/4 cup coconut milk to get a creamy paste

In a large bowl, mix 1/4 cup date paste, elaichi powder, 1/2 cup roasted rava powder and knead together. This will yield 8 balls.

Add healthy mix-ins like sliced nuts and chopped fruits and make the balls
Dry roasting in the oven takes longer, but you don't need to babysit as much as pan-roasting. Which technique you use is entirely up to you and your time availability.

Instead of adding cashews and raisins, try healthy mix-ins like sliced almonds (more surface area for crunch) and finely diced apples.
Add appropriate amount into the bowl.
Knead into balls

How many days will these ladoo stay good as it had coconut milk in it ?
In the fridge, it will stay up to a week or more. Regarding outside, it will stay probably a day or 2, depending on outside temperatures.

Yes, I think you should be able to. Though, I am worried that there is not quite as much fat in regular milk as coconut milk. You could maybe add 1 tsp of ghee to the milk and try for a little richness. Do let me know your feedback if you made it. Thanks!!
