Roast the cauliflower rice (to elevate the taste)
All my cauliflower rice recipes start with the extra step of roasting the rice (no oil) on a tawa or non stick pan. This step caramelizes the rice slightly and removes the raw/gassy taste of raw cauliflower. This pre-processing step makes all my cauliflower rice very popular with folks who love traditional Indian foods and who normally dislike salad-y type dishes.
This is probably one of the most popular/favorite recipes among my friends’ circle. They all tell me they love the recipe after making it and that makes me incredibly happy :).
And I think I know why…It has that secret step of roasting and powdering fenugreek seeds (methi), a tip my mom gave me (thanks amma!!). It gives it that authentic temple Lemon Rice taste. Give it a try!!
This one uses 2 keto favorites – coconut and cauliflower rice. This dish has delicious healthy fats and is low in carbs. If you have frozen coconut and already prepped cauliflower rice, this recipe can be made in a jiffy. This makes for a perfect lunch box recipe.
Pan roasting sesame seeds yields a wonderful aroma. Make the freshly roasted sesame seeds-urad dal-red chilli spice in your kitchen and toss the cauliflower rice with this aromatic powdered spice. You are going to love it!! The extra boost of calcium from the sesame seeds is a wonderful nutritional addition to this culinary delight.
This dish is for the spice lovers!! Loaded with garlic, green chilis and red chili powder, this one is not for the faint of heart or the Saatvic eater in you. But, if you like an Andhra-hotel style kara-saram (lingo for spicy spicy), then try this tomato rice recipe.
This recipe is spiced by the wonderfully aromatic Vangi Bath powder. Just like the other famous dish from Karnataka – Bisibelebath – the Vangi bath spice mix also uses cinnamon and coconut.
When these 2 ingredients are added to the routine sambar mix ingredients like chana dal, coriander seeds, etc magic happens – both in aroma and in taste.
This is one hearty recipe.
