Here’s a super easy sugar free kaju katli recipe for you that can be made in under 15 minutes.
Kaju katli is traditionally made with powdered cashews and sugar. But I have not used sugar. The sweetener I used is raw honey. So good for you and so delicious!!

In the traditional recipe, there is also emphasis on getting the cashews powdered just right – too much and the oil will come out, too less and it will be gritty. Who has patience for all that? My recipe is super simple using just cashews and a food processor.
This recipe needs just 2 ingredients too. (Well, the oil/ghee to butter the plate is 3rd ingredient, if you insist on accuracy).

Make this simple and delicious Kaju Katli for your family and as homemade gift for your friends. They will love it, but have no idea how easy it was for you to make it!! There are certain simple rules you have to follow to get it just right.
Recipe

This is an easy kaju katli recipe that is sugar free. Raw honey is added to freshly made cashew butter and molded into rhombus shaped katlis. Even though this sweet will be ready within 15 minutes, this dessert is sure to dazzle your guests.
- 2 cups Broken Cashews
- 2 tbsp Raw Honey
- 1/8 tsp oil/ghee (to butter the plate)
-
Place 2 cups of broken cashews on a tray and roast in a 350F (180C) for 5-6 minutes. You could also dry roast in a pan instead till you get a nice aroma and slight browning of the nuts.
The time listed above is for broken cashews. If you have bigger cashews, you may need to put in the oven for a few more minutes + stirring at the half way mark. Use your judgement. You want to get a nice browning without any burning.
-
Let the cashews cool for a few minutes. Otherwise they will sweat in the food processor. When they are cool enough to handle, add them to the food processor and let it run.
You run it past the powder point, past the crumbles point, past the doughy stage and until the butter stage. Open the processor every few minutes to keep scraping the sides and mixing it together. Run it till you get a pasty butter stage.
-
Add 2 tbsps of raw honey to the cashew butter and let the food processor run. The batter will now come together like a ball.
-
Add the ball to a buttered plate and flatten the dough out into a square. Flatten until you reach the desired thickness.
-
Cut the squares into the traditional rhomboid shaped katlis. Serve!!
Store in refrigerator to avoid oils from releasing or in the freezer for a firmer bite. Enjoy!!
Step by Step Pictures
Oven Roast Cashew…

Process them…

Powder stage – not enough…Keep going…

Crumble stage…not enough…Keep going…

Dough stage…not enough…keep going…

Butter stage …Yes!!…Now add the raw honey…

Whir it one more time…

Take that cashew-honey dough ball and add it to a buttered plate

Now flatten it…

Make the rhomboid cuts…

and voila….

Conclusion
This recipe will last you longer than the traditional kaju katli recipe. The reason is because of the honey which acts as a preservative and a sweetener.
Another point to remember – if you place this katli in a hot environment, it will start releasing some of the nut’s oil. Place it in a cool place or the fridge to avoid this. You can also freeze it for a firmer texture and eat it straight out of the freezer and it will super yummy too.

Hi Swetha. I found your blog when I was searching for recipes for Diwali sweets that didn’t have too much added sugar. I made the kaju Katli recipe today. And it was delicious! I added only 1 tbsp raw honey but it was sweet enough for me and my parents. I really appreciated your step by step pictures for the processing of cashews. They were very helpful. I will be making this recipe more often.
Very happy to hear that Pooja!! Thank you for posting your feedback!!
I tried it for my hubby , diabetic. Absolutely fabulous
So happy to hear that!!
I wish I found your recipe sooner! I had made kaju katli (well tried too) and it was a complete fail! One question, can I use drum roasted cashews and skip the roasting part?
Hi Flor, I think so.. however a light roasting will help make the roasted cashews warmer, crisper and easy to grind. Good luck!! 🙂
