Just like overnight oats or overnight buckwheat, you can make overnight bulgur wheat |bulgar wheat| breakfast.
It is a super easy recipe, yet hearty and filling breakfast option. You could top it with any combination of fruits, nuts and sweeteners and customize it to your taste.
Which to use – Bulgur #1 or Bulgur #2?
When you shop for bulgur, you will have the choice to buy Bulgur #1 or #2.
Bulgur #1 is the finest of all grinds and bulgur #2 is slightly coarser. Since they are par-boiled already, the main idea is to rehydrate them back.
I soaked 1 cup of both grains with 2 cups soymilk (you can use any kind of milk) and let them sit in the refrigerator overnight.

From far, they look similar, don’t they? But, on closer analysis, we can see that the results are quite different.

Bulgur#1 soaks up milk and softens up very well.
The fine grains soaked up about 90- 95% of the milk. And the texture of the soaked grain was also soft. Bulgur #1 was ready for a cool, hearty breakfast. All I had to do was add up all the toppings, mix and yum, yum!!

Easy, Peasy breakfast!!
Verdict: Yes, Bulgur #1 is a great choice for an overnight Bulgur recipe. A healthy, easy breakfast option – Highly Recommend!!

Bulgur #2 – Soaking isn’t quite enough
Bulgur #2 was not ready. Not only was there a pool of milk underneath, the grains felt hard (like refrigerated rice) and it was like biting into slightly uncooked grain.

So, then I just poured the contents into a tea saucepan and let the mixture come to a boil. Then covered it with a lid for 5 minutes.

Now, we are talking…Just 5 minutes of cooking just swells the grains and it develops this creamy, delicious hearty texture!!
Verdict – While Bulgur #2 may not fully ready just with overnight soaking, just a few minutes of cooking yields a delicious, creamy bulgur porridge. This is perfect for hot breakfast lovers!!
Recipe:

Overnight Bulgur (bulgar) Wheat Porridge recipe with 2 types - Bulgur #1 and #2
- 1 cup Bulgur size - #1 or #2
- 2 cups Milk (Any kind)
- Toppings (Nuts, fruits, Seeds, etc)

For Bulgur #2, soaking overnight is not enough - bring the overnight mixture to a boil, shut off heat and cover for 5 minutes. Then you get a hot, creamy well-cooked porridge.
Conclusion:
For busy mornings – choose bulgur #1, just soaking overnight needed!! It is a nice, cool breakfast – straight out of the refrigerator. Just add chopped fruits, nuts etc and your work is done.
For winter mornings, when looking for a creamy, stick-to-your-ribs kind of breakfast, choose bulgur #2.
